Here's another super easy and quick to disappear appetizer anyone can make in a short time.
Macaroni & cheese balls are delicious and the first thing to go at the recent party I brought them to.
Ingredients
Your favorite mac & cheese box mix or homemade from scratch
Extra cheese (can there ever be enough cheese?)
Flavored bread crumbs
Fresh parsley to garnish
Directions
Preheat your oven to 375-400
Follow your normal recipe but don't overdo the liquid. The trick is to make the mac & cheese a bit stickier by using less milk or more cheese. The idea is to be able to roll them into shape without them falling apart. Once it's done, you may want to chill it awhile to make it easier to handle.
I used a scoop to make them all the same size but any spoon will work. (I use a glass of water and wet the spoon to allow easy release)
Take your bread crumbs and spread it thinly on a plate so you can roll the formed mac balls and coat them all over.
While you can use a cookie sheet, I used a mini muffin pan to hold the finished product. No need to grease because the bread crumbs allow easy release.
I cooked them for about 15 minutes until the color started looking a bit toasty.
For the party these were for, I used toothpicks in everything to make them easy to handle.
Stand back and watch them disappear! Only one left on the picture below!
One variation I would consider is to add crumbled bacon the mac and cheese mix before it cools.
